Add ability to `lock` note

I can't tell you how many times I have "accidentally" overwritten a note during day to day usage (this leads to another issue) If I could "lock" a note, then I can't - overwrite contents - delete note My current "solution" is to lock it at the finder level, but that does not help me on iOS.

You can revert a note to an earlier version, did you know that? (Under “Revisions” in the menu top right). Wouldn’t that help?

Eduard Metzger: Yes, and I do this all time time when I realize (some times hours later) If I have the note locked, I dont have to "worry" about reverting back to a previous revision. Thankfully, there is the ability to review revisions as this has saved my bacon way too many times when I have accidentally overwritten a note. In my case, this has mostly been an issue when testing templates, etc. so it is not "critical" but if the templates are locked, then I can't overwrite them.
