Pan It’s pretty easy to replace an app icon manually in macOS, but not possible in iOS or iPadOS. The best you can do for the latter two is create a shortcut which launches the app.

Pan Hey Pan! Warning: while I am sure it is possible, I have not investigated how to undo this, so if you do NOT want to change your MacOS icon for an application, I do not recommend doing this. It won't work for built in apps (from Apple) but it works for anything else. Go to your Applications folder > Right click an application > "Get Info" In the Application Info window that opens, at the very top left, you will see the application icon. Drag another image onto that icon (a green plus symbol will appear) and it will change the app icon. Note that you will need to quit the app and restart it after changing the icon, for the app icon in the dock to update to the new one (and you might also need to remove from dock > re-add to dock... I can't recall).

The trouble with this is that it won’t be so easy on macOS, so you will have to see a orange on your dock at least when Noteplan is not running.
